The Top Chef Season 23 contestant reflects on the Carolina Reaper challenge, early elimination, and how the experience reshaped his palate

Set in the Carolinas, Top Chef Season 23 uses its locale to showcase the area’s local ingredients, cuisine, and culture. While livermush might be an acquired taste, the Puckerbutt Pepper Company challenge gave foodies a better understanding of the Carolina Reaper and various peppers’ spice intensity. For Chef Jassi Bindra, the challenge led him to a greater appreciation for spicy food.

This season has highlighted how even accomplished chefs can be pushed into unfamiliar territory, with challenges designed to test adaptability as much as technical skill.

In this season of Top Chef, the cheftestants push themselves beyond their comfort zones. For Chef Jassi, the pepper challenge was a prime example. While he is an accomplished chef and specializes in Indian cuisine, his food is more nuanced than intensely spicy.

While Chef Jassi has had success in other food television competitions, his time on Top Chef was short. Eliminated in the second challenge, he stumbled with balancing the spice intensity in the Puckerbutt Pepper dish. As the final course in the progressively spicier meal, his dish did not achieve what both he and the team intended.

Even if the outcome was not what he hoped, Chef Jassi found positive elements within the experience. Reflecting on the experience, he said, “Looking back, I feel good about the direction I took with my dish. In a competition like Top Chef, you have to make quick decisions and stay true to your perspective as a chef, and that’s exactly what I did. Every challenge comes with its own constraints, and I approached it in a way that reflected my style and the story I wanted to tell on the plate.”

His dish might not have had a flavor that the judges wanted, but it gave a glimpse into his way of cooking. Sometimes the dish just does not fit the brief. In this Top Chef season, the challenges are more intense. Additionally, the difference between a top dish and a bottom dish is slight.

While each challenge has a specific goal, one aspect ties them all together. As Tom Colicchio re-enforces time and again, cheftestants need to show themselves on a plate.

Chef Jassi appreciated that concept. Speaking about his Top Chef experience, he said, “If anything, it reinforced how important it is to remain confident in your choices and adapt in the moment. Not everything is always going to land the way you envision, but that’s part of the process and the pressure of the competition.”

Specifically, in the Puckerbutt Peppers challenge, the continuous tasting of spicy ingredients left his palate slightly numb. Since he is not accustomed to bolder spices, Chef Jassi succumbed to the totality of the circumstances. Unfortunately, he presented an unbalanced dish to the judges.

At the same time, Chef Jassi appreciates that this specific Top Chef experience helped him grow his appreciation for bolder flavors. He shared, “As for spicy food, I’ve definitely developed a stronger appreciation for it. Working in this environment pushes you to think about flavor in a more layered and dynamic way, and spice plays a big role in that. It’s not just about heat—it’s about how it complements and elevates the dish. I’ve enjoyed exploring that balance more and incorporating it in a way that feels thoughtful and intentional.”

Would Chef Jassi take this whole challenge again? He said that it was a huge honor to be part of this food competition. Although he only participated in a few challenges, he believes that “the impact isn’t measured in episodes. Being eliminated doesn’t define the impact I had. I think what matters is the conversations that you start, the flavors you introduce, and how you connect with people — and I’m really proud of that.”

For anyone who chooses to dine at Amrina in Houston, they will learn that Chef Jassi’s cuisine is multi-faceted, full of depth, a journey through history, and a bounty of creativity. By competing on Top Chef, he represented himself and his culinary point of view. That moment will forever be part of food television history.
