Cooking duck requires the fat to be properly rendered. Scoring the skin is vital to that execution. It is as important as the right sear, cooking temperature, and letting it rest. This duck breast was cut far too deeply. Cooking this protein as is would create a hockey puck as the final result.
MasterChef fans might remember how Jesse and Jessica had to cook Gordon's duck recipe in their semifinal round. This protein has special meaning to the couple. If the Red Team cannot serve a well-executed duck, there is no way that it can win the challenge.
